Where can I see my employees' public charging sessions with other providers?

When your employees charge with their company charge card at another provider (e.g. Fastned or TotalEnergies), this is called outbound roaming. You can see those sessions under Payment > Transactions and on your monthly statement. The Fleet cost overview dashboard shows them as 'public'.
